#32 – Iced Cajeta Maple Latte

    Available July 1 – August 4, 2026

A cold latte that brings together two of North America’s most beloved sweeteners. We pull a double shot of espresso over ice, stir in our house-made cajeta (Mexican goat’s milk caramel) and pure Canadian maple syrup, then top it with cold milk for a smooth, layered drink that’s rich without being heavy.

You may add a Concha Canadiense: a Canada Day twist on our signature concha. Hand-shaped and finished with a red and white sugar topping cut into a maple leaf pattern, then filled with a salted caramel cream. The classic soft, slightly sweet bread we bake every morning, dressed for a Canadian summer.

🇨🇦 Why Canadian? Two iconic North American sweeteners meet in one cup. Cajeta has been made in Mexico for centuries by slow-cooking goat’s milk with sugar and cinnamon, while maple syrup has been tapped from Canadian sugar maples since long before either country was named. Both are unrefined, both are deeply tied to family kitchens, and both carry a sense of place. Bringing them together in a single drink is Mercado’s way of celebrating what their Mexican heritage and their Canadian home have in common: a love for ingredients made the slow, traditional way. 🍁

#33 – Iced Café de Olla

    Available July 1 – August 4, 2026

Our take on the traditional Mexican coffee, served cold for summer. We slow-steep locally roasted coffee with raw sugar, cinnamon sticks and orange peel, then chill it down and pour it over ice. The result is a fragrant, naturally sweet iced coffee with notes of citrus and warm spice — nothing artificial, nothing added once it’s in the glass.

Café de olla is the everyday morning coffee in Mexican homes — brewed in a clay pot with raw cane sugar, canela and orange peel. The Canadian twist is in the cup itself: Mercado Panderia uses coffee beans roasted right here in our city, supporting the local roasters who make Vancouver one of the strongest specialty coffee scenes in Canada. It’s a Mexican recipe, brewed with Canadian craft. 🍁
